Corned Beef Hash

Corned Beef Hash
1/2 of an onion, peeled and chopped
1 clove garlic, chopped fine
1 Tablespoon each, butter and olive oil
4-5 cups cubed corned beef
4-6 cooked potatoes, chopped
3 cooked carrots, chopped
Heat the butter and olive oil over medium high heat until hot add the chopped onion and garlic. Saute' until translucent and aromatic (3-4 minutes) Add the potatoes and carrots, cook to desired crustiness (crisper=longer softer=shorter) Add the cubed corned beef and heat through.
At home I add some of the cabbage from Corned Beef and Cabbage meal that I have chopped up to the mix at the same time as the corned beef. Heat through and enjoy. This will feed 3-4 people generously
